The Tramontana, called Cercium in the chronicles of the Roman historians, has always marked the character of the people and the wines of the Empordà.
The wine CERCIUM comes from the vineyards of the Mas Llunes, cultivated in Garriguella in harsh and rough terrain and strongly influenced by this wind from the north.

production
The different varieties are fermented separately in fermentation tanks of stainless steel and cooled to a temperature of 20ºC. They are pumping over twice daily and emptied/drained after 20-30 days from the start of fermentation depending on variety. The prolonged incubation is determined by tasting.
The fermentation malolactic is carried out in the warehouse.

ageing
6 months in semi new casks of Allier French oak.

tasting notes
A cherry colour with a violet rim. Fresh and power aroma, expressive, mature fruit (cherry and cranberry...) and cocoa. In the mouth it is fresh, extensive, fruity with discreet notes of beautifully integrated oak.

gastronomic notes
Very versatile. It is a perfect match for white and red meats, sausages, cheese, salads and starters with a vegetable base, seafood, fish and rice.
