1+1=3 (D.O.CAVA, D.O.PENEDÉS AND D.O.CATALUNYA)
Our cava is made out of the three classical grape varieties: Macabeo, Xarello and Parellada, through the traditional cava method (second fermentation in the bottle). The high altitude of our vineyards together with the long sun hours they are enjoying, gives our wines extreme elegance and good acidity, even having a good alcohol content, which brings great balance to the final product. The vinification at low temperatures keeps the fruit and the good nose, and the added yeasts of highest quality turn the wine into a very elegant cava, very fine and pleasant in the mouth.
Sugar dosage: 6 g/l
Very neat wine, golden shades. The size of the sparkle is small and persistent, thanks to the regular fermentation at the cellar. Chardonnay provides to wine an exotic perfume. Macabeo and Parellada, gives notes of apple, pear and peach. It has also notes of bakery , fennel ad aniseed, proceeding from the long rest with yeasts in bottle.
Good persistence in the crown and marked effervescence, indicating a paused solution of carbonic acid during the second fermentation.
Complex aroma, with notes of ageing in dregs. Finely preserved fruity aromas (apple, pear) from the primary aromas of the grapes and its fermentation.
Xarel•lo gives both body and structure
Certain heavy starters: croquettes (cheese, meat or ham), salty crepes, a slice of toast with
escalivada’ (typical preparation of Catalan cuisine that consists of several types of grilled vegetables). ‘Piquillo’ (peppers variety) filled with cod and ‘escalivada’ sauce, Iberian cold meats. Toast with foie.
Pasta.
Fish: grouper with a soft garlic mousseline.
Desserts: wide range of sweets such as Catalan cream and toffee iced cake, ‘catanies’ (Catalan chocolates).
