The 991'N Macabevs, is born of a selection of old vines of macabeo, we give a draft in the production of this variety and try to give it more personality
From a careful selection of the parcels of the Deveses property, doing a control of the grapes, the date of harvest is decided.
The grapes are picked in boxes of 20kg that they do not take more than two minutes to arrive at the winery in this way the grape it does not undergo oxidations
After the grapes have been entered via the destemer, it becomes a process of selection of grape berries. After that its have one smooth pressed and puts the grape inside to a staines steel tank where it will make a skin maceration. By means “delestages” and daily tastings the drain and press decide date. Once pressed it will go through fermentation
The fermentation is made to about 12 degrees having been able to last about 20 days approx.
Once fermentation finished we will remain the wine on the mother’s lees till bottleing. It has a natural stabilitation, so we avoid any agressive treatment. Before bottleting we make a smooth filtration.
Visual: Yellow straw color, with reflections of lemon.
Bouquet: Aroma of great intensity that floral notes remember(remind), of white fruit and tropical tones.
Mouth: The entry in mouth is very agreeable, greedy, with many freshness. Wide end, full of shades and an excellent persistence.
It is a pure wine of macabeo, with could be combined any type of fish and meat. The pascona blanc adapts to any situation, with which a great gastronomic polyvalency demonstrates
This one is a young wine that it is possible to consume immediately.
The temperature for its consumption is from 8 to 10 degrees.
