Harvested manually, collected in small containers.  The grapes are destemmed  and deposited in stainless steel vats for maceration (6-8 hours) at 10 degrees. Only the free run juice is extracted and fermentation begins at 14 degrees in a stainless steel vat.  When density of 1.020  is reached the liquid is transferred to chateau style barrels of French Allier oak to complete the fermentation process, aging 2 months in the same barrels giving a “batônnage” with the fine lees.

 The name CTONIA is an epithet of Demeter that signifies ¨that of the underground¨ and has been chosen to venerate the vineyard of 1961, whose origins are rooted in the underground, from which arises the white Grenache grapes from which this wine is produced.  Also in honor of Demeter, considered the great god of agriculture and who according to the Homeric Hymn to Demeter granted the blessing of agriculture to those who received him kindly.

 



tasting notes

White wine with yellow color and green tones.  High complexity and intensely aromatic, with aromas of white fruits, chlorofil, and lightly toasted oak barrel, always after the terroir, with a voluminous entry due to aging in the barrel with the fine lees, with a light meatiness, surprising in a white wine.  Very good persistence due to its noted acidity.  A wine with a lot of personality, and a strong backbone.
